This quick and easy AIP creamy cucumber salad is super refreshing on a hot summer day! Plus it’s dairy-free, Paleo and AIP compliant!

It’s early August, cucumbers are in season and I am here for it! Something about cucumbers is just so refreshing, am I right?

Name a more refreshing vegetable than cucumber. Go ahead, I’ll wait…

Maybe it’s their water content? Cucumbers are composed of about 96% water, which is great for staying hydrated in a heat wave. And there’s nothing quite like the crisp crunch of a fresh cucumber on a hot summer day.

Plus, did you know cucumbers are rich in vitamin K? One large cucumber contains about 62% of the RDI for vitamin K. That’s insane! Be sure to eat your cucumbers with the peels on, for maximum health benefits. The peel is where the vast majority of the vitamins, minerals and phytonutrients are stored. And be sure to pick a cucumber with a deep green peel for the most nutrients.

This AIP version of a creamy cucumber salad is just what you need this summer to utilize this refreshing veggie. It comes together in about 5 minutes and goes well with just about everything. I like to fire up the grill and throw on some chicken, steak or salmon and serve it alongside this cucumber salad for a super quick lunch or dinner. Or I’ll make a simple tuna salad to serve alongside this cucumber salad for lunch. Or I’ll even just roll up some AIP-compliant lunch meat with slices of avocado to eat with it.

Plus, this AIP Creamy Cucumber Salad is perfect for those weeknights when you just don’t want to turn on the oven because it’s too dang hot. You could even make it and take it on a picnic in the park. It’s the perfect salad to-go.

How to make this Quick & Easy Creamy Cucumber Salad

First, you’ll want to whip up a quick batch of AIP Ranch Dressing. I promise you, it will come together SO quick. In a pinch, I’ve literally just thrown everything into a jar and mixed it with a spoon in under a minute and it worked perfectly.

Once you have the dressing, chop a cucumber, grate a carrot, slice some radishes, and toss it with a few tablespoons of the AIP ranch. Done and done!

FAQ

Can I use other vegetables in this Creamy Cucumber Salad?

Absolutely! Red onions are a popular addition to cucumber salads. As are tomatoes (not AIP). Go ahead and use whatever fresh veggies you have on hand. I’m sure they’ll all pair nicely in this salad.

What if I don’t like ranch?

Any dressing would go well with this salad, really. Even if you don’t want it creamy, you could just toss it with a drizzle of olive oil, vinegar and a sprinkle of sea salt and it would still be delicious.

Can I make this ahead of time?

Cucumber salad is generally best served fresh, but if you want to prep it ahead of time, just prepare your veggies and dressing separately and combine just before eating.

What if I’m not following AIP or Paleo?

This AIP Creamy Cucumber Salad is delicious, no matter what diet you do or don’t follow! If you don’t feel like making the AIP ranch dressing, just use your favorite bottled dressing and enjoy!

Description

This quick and easy cucumber salad is super refreshing on a hot summer day! Plus it’s dairy-free, Paleo and AIP compliant!


Ingredients

Scale

1 large English cucumber, quartered lengthwise and chopped

1 large carrot, shredded

4 medium radishes, thinly sliced

4 Tbsp AIP Ranch Dressing

Sea salt, to taste

Optional: top with fresh dill


Instructions

Wash and chop your cucumber, shred the carrot and thinly slice the radishes (using either a mandoline, or a sharp knife).

If you don’t have AIP Ranch on hand already, whip up a quick batch (it will take about 2 minutes, promise). Use 3-4 Tbsp, depending on how creamy you want the cucumber salad. Toss to coat and serve fresh. Add sea salt to taste, if desired. Optionally, top with freshly chopped dill.



Notes

This salad is best served fresh, but will save in an airtight container in the fridge for about a day. If you want to make it ahead of time, just store the dressing separate from the salad and it should save for an extra day or two.
